Chicken Lettuce Cups

Ingredients

  • For the filling:

    • 1 lb ground chicken
    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • 1 small onion, finely chopped
    • 1 bell pepper, finely chopped (any color)
    • 1 tablespoon soy sauce (or tamari for gluten-free)
    • 1 tablespoon hoisin sauce (optional)
    • 1/2 teaspoon Evermill ground ginger
    • 1 teaspoon Evermill Five Spice 
    • Salt and pepper, to taste
    • Chopped green onions (for garnish)
    • Chopped cilantro (for garnish, optional)
  • For the cups:

    • Butter or romaine lettuce leaves (large enough to hold the filling)

Instructions

  1. Cook the chicken:

    • In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, sautéing until softened (about 3-4 minutes).
    • Add the garlic and ginger, cooking for an additional minute until fragrant.
    • Add the ground chicken to the skillet, breaking it apart with a spoon. Cook until browned and cooked through (about 5-7 minutes).
  2. Season the filling:

    • Stir in the soy sauce and hoisin sauce (if using). Cook for another minute, allowing the flavors to combine. Season with salt and pepper to taste.
  3. Assemble the cups:

    • Take a lettuce leaf and spoon the chicken mixture into the center. Top with chopped green onions and cilantro if desired.
  4. Serve:

    • Enjoy the chicken lettuce cups warm, with any extra sauces on the side for dipping!
