Spiced Zucchini Fritters

Ingredients:
- 2 medium zucchinis
- 1 teaspoon salt (for draining zucchini)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped (or cilantro if you prefer)
- 1/4 cup grated Parmesan cheese (optional for added flavor)
- 1/2 cup all-purpose flour
- 1/4 cup chickpea flour (optional, adds extra crispiness)
- 1 large egg
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground paprika
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground coriander
- Olive oil or vegetable oil for frying

Prepare the Zucchini:
- Grate the zucchinis using a coarse grater. Place the grated zucchini in a colander and sprinkle with 1 teaspoon of salt. Let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini. This step is crucial for crispy fritters.

Mix Ingredients:
- In a large bowl, combine the grated zucchini, finely chopped onion, minced garlic, chopped parsley, and Parmesan cheese (if using).
- In a separate small bowl, whisk together the egg with all the spices: cumin, paprika, turmeric, black pepper, and coriander.
- Add the egg mixture to the zucchini mixture. Stir well to combine.

- Add the all-purpose flour and chickpea flour (if using) to the zucchini mixture. Stir until everything is well incorporated. The mixture should be thick and hold together when spooned.
