Spiced Zucchini Fritters Recipe

Ingredients:

  • 2 medium zucchinis
  • 1 teaspoon salt (for draining zucchini)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped (or cilantro if you prefer)
  • 1/4 cup grated Parmesan cheese (optional for added flavor)
  • 1/2 cup all-purpose flour
  • 1/4 cup chickpea flour (optional, adds extra crispiness)
  • 1 large egg
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground coriander
  • Olive oil or vegetable oil for frying

Instructions:

  1. Prepare the Zucchini:

    • Grate the zucchinis using a coarse grater. Place the grated zucchini in a colander and sprinkle with 1 teaspoon of salt. Let it sit for about 10 minutes to draw out excess moisture.
    • After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini. This step is crucial for crispy fritters.
  2. Mix Ingredients:

    • In a large bowl, combine the grated zucchini, finely chopped onion, minced garlic, chopped parsley, and Parmesan cheese (if using).
    • In a separate small bowl, whisk together the egg with all the spices: cumin, paprika, turmeric, black pepper, and coriander.
    • Add the egg mixture to the zucchini mixture. Stir well to combine.
  3. Add Flour:

    • Add the all-purpose flour and chickpea flour (if using) to the zucchini mixture. Stir until everything is well incorporated. The mixture should be thick and hold together when spooned.
  4. Fry the Fritters:

    • Heat a couple of tablespoons of oil in a large skillet over medium heat.
    • For each fritter, spoon about 2 tablespoons of the mixture into the hot oil, flattening it slightly with the back of the spoon.
    • Cook for about 3-4 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.

    • Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
