1 small garlic clove, minced fine or shredded with a microplane

¼ cup red wine vinegar

¼ teaspoon salt

¼ cup olive oil

¼ teaspoon Italian mix

½ teaspoon oregano

¼ teaspoon salt


Cure the garlic by adding it to a bowl.  Pour the vinegar over it, let it sit for 15 minutes. Add the remaining ingredients and toss with a mix of cold crunchy vegetables and parmesan.
