Ingredients: Thyme, Summer Savory, Black Pepper, Oregano, Lavender, Sage, Basil, and Rosemary.


Herbes de Provence is an aromatic mixture of dried herbs and spices, which traditionally includes thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf. Evermill’s Herbes de Provence adds black pepper, sage and lavender while removing the bay leaf. We added black pepper to give our mixture more of a kick, with our sage and lavender adding more aromatic fragrance to our blend as we found ourselves using it more and more as a baking and roasting element, and less as a garnish. 


The origin of Herbes de Provence undoubtedly started in France, with the “Provencal” element of the name almost unmistakably referring to southern France. As such, it is commonly used in French cuisine, but we have found its flavors are an excellent pair with Mediterranean dishes. We couldn’t live without Herbes de Provence in our collection, using it mostly in our favorite soups and simple stews like ratatouille. We use it on skirt steak and other gamey meats, we love it as a topper on greek salads, and we’ll never say no to seasoning couscous with it, in french onion soup, or as a rub on roasted trout.
